The Perfect Dough

In order to produce the perfect shaped sugar cookies, you’ll need to prepare your dough ahead of time with the perfect ingredients and chill overnight.

  1. Use Egg Yolks at Room Temperature: Using just the yolks, instead of the whole egg, for a more tender and evenly textured cookie.
  2. Select Pure Vanilla Extract: Cutting costs with imitation extracts is never the way to get professional quality cookies. Invest in a high-quality “pure” extract.
  3. Whisk-to-Sift the Flour: In order to evenly mix all your dry ingredients, reach for a whisk and “sift” them to a nice fluffy powder.
  4. Don’t Overmix: Stop mixing after the ingredients are blended. An overmixed dough creates a cement, tough, dense cookie. So, turn off the mixer already.
  5. Chill the Dough: Portion your dough into little balls and chill them overnight.

The Perfect Shape

There are a few tricks to getting the perfect shape both in the oven, as you roll them out and cutting them into your shape of choice – in this case, Disney Christmas Cookies in the friendly shape of everyone’s favorite, Mickey Mouse!

  1. Lightly Floured Work Surface: It’s imperative that you keep your work surface floured to avoid the dough from sticking, however too much flour will dry out your cookie dough and lead to cardboard cookies.
  2. Chill the Dough Again Before Baking: Cut out your cookies and place on a parchment-lined cookie sheet, then chill the dough shapes long enough to regain a firm structure, which should be about 30 minutes.

There’s nothing that will take the magic out of your cookies than overbaking them. There should be hardly any color or “golden” to them, which is around seven to eight minutes at 350 degrees. It’s also advisable to rotate your cookie sheet for a nice even bake to your cookies. Remember, waiting until your cookies are turning golden will cause you to end up with burnt Mickey ears instead of Disney Christmas Cookies.

  2. Flood Icing: You can fill large areas by using this type of icing. Simply add more egg whites, milk, or water to create this consistency in your icing.
