Just the right about of sweet, these almond macaroons inspired by the Boardwalk Entertainment District at Walt Disney World, are the perfect little treat. Cozy up in front of the tree with a spot of tea or coffee and enjoy a nibble on these little delights.

Ingredients

  • 1 1/2 cups 1 1/2 Blanched Almonds

  • 1 1/2 cups 1 1/2 Confectioner’s Sugar

  • 1 cup 1 Granulated Sugar

  • 3 ea 3 Egg Whites

  • 1 1/2 tsp 1 1/2 Almond Extract

  • 1/4 tsp 1/4 Salt

Directions

  • Preheat your oven to 350° F.
  • Place almonds in a food processor; cover and process until smooth. Add the confectioners’ sugar, (1) egg white, extract and salt; cover and process until smooth.
  • Add granulated sugar to mixture in a food processor; pulsing to combine. Process mixture until very fine, about 1 minute.
  • Add (2) egg whites one at a time, pulsing between each
    addition; process until mixture is very smooth, about 2 minutes.
  • Line a sheet pan with parchment paper or silicone baking mat. Spoon the almond mixture into a pastry bag fitted with a small tip; pipe 1-inch mounds onto the prepared pan. Use a
    dampened finger to gently flatten the tops of each cookie.
  • Bake for 15 to 18 minutes, or until cookies are deeply golden and the tops have cracked.

Notes

  • Optional: After cookies cool, you can dip half of each cookie into chocolate made for coating or dipping.
